Especially good on whole chicken, pork and ribs. 

2 T. garlic powder 
2 T. onion powder 
2 T. black pepper 
1 T. salt 
2 T. chili powder 
2 T. Hickory Smoked Salt
1 T. cayenne pepper (optional) 

Combine all ingredients in a small jar, twist the lid on airtight, and shake to mix.  Store away from heat and light for up to 6 months.

Rub whole pieces of meat (whole chicken, pork roast, ribs etc) with mixture before baking.  After browning the pork chops or chicken parts on top of the stove, sprinkle with the Jo's Memphis Rub and then bake for approximately 15-20 mins.
