4 T. melted butter
1 ½ c. Vanilla Wafer cookie crumbles
3 pkgs. (8oz each) cream cheese, softened
½ c. sugar
4 eggs
1 cup (8oz) sour cream
1 ½ tsp. vanilla

Preheat oven to 350o F. 

Prepare 9 inch springform pan by covering the bottom with foil and the inside with wax paper then spray with vegetable spray.

Mix the melted butter with the cookie crumbs. 
Press the mixture onto the bottom of the prepared springform pan; bake 10 minutes.

Beat the cream cheese with an electric mixer at medium speed until light and fluffy. 
Continue beating while gradually adding the sugar. 
Add the eggs, one at a time, beating on low speed after each addition. 
Add the sour cream and vanilla and mix until well blended. 

Pour mixture into cake pan, over the crust. 
Bake at 350o F for about 40 mins. or until the filling is set. 
Remove from oven and allow to cool completely on a wire rack. 

Refrigerate for at least 6 hours or overnight before removing from pan.

How to Soften Cream Cheese

  • Place completely unwrapped package of cream cheese in microwaveable bowl.
  • Microwave on HIGH 10 sec. or just until softened. 
  • Add 15 sec. for each additional package of cream cheese. 

Serve with Basically Delicious Strawberry Sauce.
