1 lb strawberries, fresh or frozen, sliced
½ c. water 
2 T. sugar 
1  T. water 
2  t. cornstarch
Red food coloring, optional

Combine ½ the sliced strawberries, ½ c. water, and sugar in a small saucepan over medium-high heat; bring to a boil.  Reduce heat, and simmer 2 minutes. 

Remove from heat.  Using a food processor, process the cooked strawberries and return mixture to pan. 

Combine 1 T. water and 2 t. cornstarch in a small bowl, stirring with a whisk.  Add cornstarch mixture to pan.  Bring to a boil; cook 1 minute, stirring constantly, add food coloring then add other ½ of strawberries.  Simmer about 2 minutes.

Refrigerate before serving with Basically Delicious Cheesecake.
