Ingredients for cake:

1 1/4 c. Flour

1 tsp. Salt

2 Eggs

1 c. Sugar

2 tsp. Cinnamon

2 tsp. Vanilla extract

1 1/2 tsp. Baking powder

3/4 c. Oil

2 c. Carrots, grated

1 c. Chopped pecans or walnuts

1 c. Raisins

Ingredients for topping:

1/2 c. Sugar

1/4 c. Butter

8 oz cream cheese


Procedure for cake:

Preheat oven to 350 degrees F and grease a 9 in. cake pan.

In a large bowl, using an electric mixer on low, mix together all ingredients except carrots, nuts and raisins, until blended.  Then mix at medium for 2 mins.

Stir in carrots, nuts and raisins.

Pour into 9 in. pan and bake at 350 o F for 40 to 45 mins.

Cool completely, then top with Cream Cheese topping.

Procedure for topping:

In a small sauce pan, on medium heat, melt sugar and butter, stir about 3 mins.

In a mixing bowl, add cream cheese and sugar/butter mixture.  Beat until fluffy.
