|Procedure for cake:
Preheat oven to 350 degrees F and grease
a 9 in. cake pan.
In a large bowl, using an electric mixer
on low, mix together all ingredients except carrots, nuts and raisins,
until blended. Then mix at medium for 2 mins.
Stir in carrots, nuts and raisins.
Pour into 9 in. pan and bake at 350
o F for 40 to 45 mins.
Cool completely, then top with Cream
||Procedure for topping:
In a small sauce pan, on medium heat,
melt sugar and butter, stir about 3 mins.
In a mixing bowl, add cream cheese and
sugar/butter mixture. Beat until fluffy.
