¾ c. sugar
1 t. vanilla extract
¼ t. cream of tartar
3 unbeaten egg whites
¼ c. boiling water
Food coloring optional

Mix together all ingredients, except for boiling water.  Add boiling water, beat on high until mixture forms peaks (like meringue) for approximately 5-7 mins add food coloring.

Yield:  Covers a 9x13-sheet cake or 1 dozen cupcakes.
