(Makes a 9x9 square or 8x8 round cake)

1 egg
¼ c. margarine or shortening
2/3 c. sugar
1 ½ c. flour
2 T. cocoa for Chocolate Cake (add with flour) 
¼ t. salt
2 t. baking powder
½ c. milk
1 t. vanilla
2 T. cocoa for Chocolate Cake 
Vegetable Spray

Preheat Oven to 350o F.

Spray 9x9 square or 8x8 round pan with vegetable spray.

With a mixer, cream margarine or shortening and sugar; add unbeaten egg and vanilla.

Sift together flour, salt and baking powder in medium bowl. 

Add dry ingredients alternately with milk to creamed mixture.  Beat for 2 minutes.

Pour into prepared pan and bake for 30-40 minutes, use toothpick test to check for doneness.

Cool 10 minutes before turning over onto a serving plate.

Cool completely before frosting or icing.

Frost with Seven Minute Frosting or Butter Crême Frosting.

Yield:  8-10 servings
