This is one of my own personal recipes.  You can make individuals Quiches by cutting pie crust to fit inside muffin/cupcake pans.  These can be served either hot or cold, according to personal taste.

9 in. pie crust

1 c. diced ham

1 heaping Tbsp. Dijon mustard

1/2 c. onions

8 oz Swiss cheese, grated

8 oz. cream cheese, cubed 

1/2 can spinach, well drained

4 eggs, beaten

1 Tbsp. oil

1/4 tsp. salt

1/4 tsp. pepper


Preheat oven to 400o F.
Prick bottom and sides of crust and bake for 8 mins.  Reduce oven to 350o F.

In medium sauce pan on moderate heat, sauté the onions in oil until soft 
(about 5 mins).

Add the cream cheese, heat until smooth.

Gradually add the eggs, stir well.

Add remaining ingredients.
Pour into pie crust and bake on 350o  F for 40 to 45 mins or until center is firm.

Serves 6- 8

Serve with a nice green salad and a dry white wine.
