Ingredients:

8 c. water

1 tsp. salt

1 lb. potatoes, cut into chunks

1 leek, cut into chunks

1/3 c. rice

butter (optional)

Procedure:

Bring water and salt to a boil in a large pot.

Add potatoes and leek, cook for 20 mins on medium heat until potatoes are tender.

Reserving the cooking water, drain leek and potatoes,.

In a blender or a food processor, (in small batches) blend potatoes, leek and a small amount of the reserved cooking water, until smooth, return to pot.

Add rice and 2 c. of water to pot, cover and cook on low heat for 20 mins or until rice is done.

Serve with a pat of butter and nice crusty french bread.
