A recipe from Dr. Lisa McKee's HNFS 263 The Science of Food: Laboratory Manual Fall '98 semester at NMSU.
When you make it, donít let on about the pretzels, thatís the SURPRISE !

6 Tbsp margarine, softened

1 1/2 Tbsp brown sugar

1 1/4 c coarsely crushed pretzels

3 oz pkg strawberry gelatin

1 c boiling water

15 oz pkg frozen strawberries, undrained

4 oz cream cheese (no-fat if you like) softened

1/2 c sugar

1 c whipped topping


Cream margarine and brown sugar until smooth.  Stir in pretzels.  Pat into a 9x9 baking pan.  Bake at 350 degrees F for 10 mins.  Set aside to cool.

Dissolve gelatin in boiling water.  Stir in strawberries.  Chill until slightly thickened.  Beat cream cheese and sugar together until smooth; fold in whipped topping.  Spread over crust.  Top with gelatin mixture.  Chill until firm.
Serves 6 (serving size 1 cup).
